Baked Zucchini Sticks

I've been on a vegetable binge lately and wanted to find a way to kick it up a notch. Matt loves zucchini, but he also loves mozzarella sticks, so why not make two become one!? Nix the fattening cheese for juicy zucchini and bake, not fry!

These are definitely best served right out of the oven and I served mine with marinara sauce (organic jarred since I was lazy). I used a mix of regular italian and panko breadcrumbs for an extra crunch. Now remember, I am usually only cooking for two, so adjust the recipe as needed for the amount you need. Here's the recipe!

Baked Zucchini Sticks

Ingredients:
2 zucchinis
1 egg (I use egg substitute)
1/2 cup italian breadcrumbs
1/2 cup panko bread crumbs
1 tsp garlic powder

Directions
Preheat oven to 400 degrees and line a cookie sheet with tin foil (easy clean up!) and spray with cooking spray. Chop zucchinis in half, then lengthwise into sticks. Mix the breadcrumbs and garlic powder together in a bowl and set aside. Scramble the egg in a separate bowl (or just pour in egg substitute) and coat each zucchini stick in the egg, then toss the sticks in the bread crumb mixture. Only do a few at a time and make sure to let excess egg drip off the sticks so the breadcrumbs don't start to clump. Place the sticks on the cookie sheet and bake for 20 mins or until golden brown and tender.
